The Cod Cuisine in Tossa de Mar

Cod has been and remains an essential ingredient in the traditional Lenten dishes of Tossa's cuisine, associated with a period of meditation and fasting before Easter. In Catalan culture, Lent was represented as an old woman with seven legs, symbolizing the seven weeks of this period, with cod as a symbol of an important food. The restaurants in Tossa that participate in "La Cuina del Bacallà" (The Cod Cuisine) revive this tradition by offering special menus where cod takes center stage as a festive dish of great quality.
